Ingredients:
1-pound ground beef
3/4-cup onion chopped
1 1/2-teaspoons chili powder
1/2-teaspoon salt
1/2-teaspoon garlic salt
1-can tomatoes cut up
1-can red kidney beans
3/4-cup rice quick cooking
3/4-cup water
3-tablespoons green bell pepper chopped
3/4-cup cheddar cheese shredded
Directions:
Heat a non-stick skillet over medium heat.
Add the ground beef and onion. Cook until the beef is beginning to brown and the onion turns translucent, about 10 minutes. Drain off any excess fat.
Sprinkle the mixture of beef and onions with chili powder, salt, and garlic salt.
Stir in tomatoes, beans and uncooked rice, water, and green pepper.
Cover and simmer gently, stirring occasionally, for about 20 minutes or until the rice is cooked through.
Top with shredded cheese.
Cover and heat till cheese melts, about 2 minutes.
